10 Ways to Use Black Garlic

Black garlic is an ingredient celebrated by chefs across the world for its sweet and savoury notes. It offers real depth to many well-loved dishes by enriching and intensifying their flavours, or can even be enjoyed as a quick snack. Alongside its delicious flavour, it boasts a number of health benefits, too.

 

So, how is it made?

Whilst at first glance, these cloves of black garlic may resemble a bulb of garlic abandoned at the back of fridge for a questionable amount of time, it does in fact take tender love, heat, time and care to produce these gems. Regular garlic bulbs are slowly aged and fermented at a low heat over a course of 60-90 days. During this time, the cloves lose their white and crunchy exterior, transforming into sticky, jelly-like black garlic cloves.

 

And the taste?

Sweet and earthy, packed with umami goodness. Carrying notes of molasses, balsamic vinegar and soy sauce, black garlic is the winning ingredient for a multitude of dishes. What’s more, it doesn’t leave that infamous garlicky odour like its traditional counterpart.

1. Beef Bolognese or Chili

 

Pairing particularly well with red meat, black garlic will make the perfect addition to your favourite week-night meals.

 

2. Roasted Aubergine

 

Give your vegetarian dishes an Umami boost by crushing some black garlic cloves into a paste and mixing with spices. Spread this onto your aubergine and roast for a delicious meat-free dinner.

 

3. Eat as a Snack!

 

Sweet from natural sugars and packed with antioxidants, they make an ideal healthy snack.

 

4. Aioli

 

Blend with mayonnaise for an easy black garlic aioli.

 

5. Salad Dressings & Marinades

 

The sweet undertones of black garlic make it the perfect ingredient to add into sticky dressings. Blend with olive oil, honey and balsamic vinegar for an easy salad dressing or a marinade for pork.
