Soto Manrique is a small, quality-driven project in the Sierra de Gredos, focused on expressing the purity and precision of high-altitude vineyards. The estate works extensively with old vines of Albillo Real and Garnacha, adopting a low-intervention philosophy to respect the unique mountain environment. Their wines mirror the region’s rugged terrain, marked by freshness, clarity and elegant structure.
Vineyard
La Viña de Ayer sources Albillo Real from old bush vines planted on granitic sands at elevations often exceeding 700–900 metres. These poor, decomposed granite soils drain freely, naturally limiting vigour and enhancing aromatic lift. Cool mountain nights preserve acidity, while long sunny days promote slow ripening, resulting in a white wine that balances richness and tension. Many parcels are tended manually due to steep terrain.
Winery
Grapes are hand-harvested, sorted, and often pressed whole-bunch to maintain purity. Fermentation takes place in stainless steel, concrete, or large used barrels, depending on parcel character. Ageing on fine lees adds texture and depth without masking Albillo’s natural savoury elegance. Minimal sulphur and restrained winemaking allow the wine’s mountain origins to shine through.
