We have a close relationship with our fish and seafood suppliers, mainstream and specialist, all our suppliers have close links with NGOs such as MSC and work to develop and market only sustainable alternatives. Our suppliers only ship fish around the country if they do not have supplies locally; they adopt minimum food miles which mean maximum freshness.
A large amount of fish and seafood is caught wild; this can lead to overfishing, destructive catch methods and unwanted by the boat. Our suppliers have taken the stance to work closely from within the industry to guide customers towards sustainable choices.

Salmon was at one point a luxury which was available only to a few, however thanks to the development of aquaculture, Salmon is now readily available, it is also affordable, these factors make it the UK’s largest selling fish.
Wild salmon are now in short supply and remain on the red watch list, they are available from February to August, the wild salmon has firmer flesh and more flavour– but this is reflected the high price. A wild salmon can grow as large as 45kg, but more commonly are up to 15kg. Farmed salmon sizes range from 2kg to 8kg. Certified organic farmed salmon is also available, wild salmon are not classed as organic. The suprême is the most popular salmon portion, which comes with or without skin – salmon steaks are also widely used and well priced. Salmon can be used in many recipes and pairs with a vast array of flavors from around the world. Salmon is delicious hot or cold.
