Manchego aged Esperanza is the most complex style of this DOP classic. As a result, extended ageing produces a concentrated, deeply nutty sheep’s milk character. Furthermore, this suits a cheese board as the Spanish centrepiece. In particular, aged Manchego pairs beautifully with aged Rioja or Tempranillo Reserva.
