A traditional Chinese cooking technique that has quickly begun to diffuse around the globe, stir frying is an incredibly popular way to create delicious, healthy meals that can be easily customised to suit your tastes. Originally cooked using a wok, stir frying can be likened to the Western technique of sautéing: ingredients are pan-fried in a small amount of oil whilst being stirred or tossed over a high temperature. In fact, this authentic Asian cooking style dates all the way back to the Ming dynasty in the 1300s!

 

The perfect solution to a quick, nutritious meal, a stir fry allows you to use whichever vegetables or meats you have in your fridge to create a family dinner that is guaranteed to please even the pickiest of eaters. Ingredients (serves 4)

 

 

 

Method

 

  1. Finely chop the garlic and spring onion, and fry in a splash of oil over a high heat until soft. Use a wok or a deep, large frying pan.
  2. Dice the chicken breast into cubes and add to the wok, cooking for a few minutes until cooked on all sides. If desired, add a teaspoon of ground ginger.
  3. Cut the assorted vegetables into long, thin strips and add these to the pan with the bean sprouts, adding a splash of stock or water if the mixture starts to stick. Add a splash of soy sauce.
  4. Cover the mixture with pre-boiled chicken stock and allow to simmer for a few minutes before adding the prawns. Allow the mixture to boil for 10-15 minutes, adding stock when it starts to reduce. Add chili flakes if desired, and turn down the heat.
  5. As the stir fry is cooking, boil the water for your rice noodles. Once the water is bubbling, add a portion of noodles for each person (these are usually divided into nests), and cook for 3-4 minutes.
  6. Drain the noodles and add them to the wok, stirring everything through thoroughly over a low-medium heat. Season to taste if needed, before spooning into bowls.
  7. Add fresh coriander to garnish, and enjoy!
