Producer
Viñas del Cámbrico is a biodynamic and organic estate located in the Sierra de Salamanca, dedicated to preserving local grape varieties—especially Rufete and its rare white mutation, Rufete Blanca. The winery is known for rigorous vineyard selection and low-intervention techniques, producing wines of great purity and regional authenticity.
Vineyard
The estate’s vineyards sit on ancient granitic outcrops at elevations between 700–900 metres. The soils are extremely poor, sandy granites that force the vines to root deeply, producing concentrated yet finely textured fruit. Many of the vines are old and planted on traditional terraces, which are tended entirely by hand due to steep terrain. This terroir translates directly into wines of pronounced mineral structure.
Winery
Grapes are harvested by hand and fermented with native yeasts in stainless steel or concrete. Ageing occurs on the lees to build texture without overpowering the delicate character of the variety. Winemaking is deliberately unobtrusive—no excessive oak, limited sulphur, and minimal handling—allowing Rufete Blanca’s floral, herbal and mineral profile to express itself naturally.
