Producer
Viñas del Cámbrico is based in one of Spain’s most recently granted DOs, Sierra de Salamanca, located at the southern end of Castilla y León. Since their first vintage in 2003 they have been making wines from the local Rufete and Rufete Blanca grapes, grown on old vines which are planted on granite and slate soil terraces. Over time the holdings have been expanded to cover ten hectares of vineyards – no easy task since this expansion involved negotiating and purchasing land from over 130 growers. From these vines, Viñas del Cámbrico produce stellar examples of authentic, handcrafted wines, true to their region of origin and a unique addition to the viticultural landscape of modern Spain.
Vineyard
The grapes were sourced from high-density, ten-year-old bush vines, planted on granite soils in the “Las Cabezas” vineyard. The vineyard is certified organic.The grapes were harvested by hand at the end of September.
Winery
Following hand sorting at the winery, the grapes were pressed and the juice was taken off the skins immediately and moved to stainless steel tanks for fermentation. After fermentation, the wine was passed to French oak barrels for eight months’ ageing, before being bottled unfined and unfiltered.
