Producer
The Soto Manrique family first came to winemaking in Rueda, but as the second generation has joined the business, they have turned their attention to producing wines in the Cebreros DO, located in the Sierra de Gredos mountain range to the west of Madrid. This up-andcoming region is starting to gain plaudits for producing a unique style of Garnacha, with an almost Pinot-like elegance and finesse, crafted from old vines planted on granite and slate soils. Alongside this they also cultivate the indigenous Albillo Real, an aromatic white grape, here given a spell of skin contact to add structure and complexity.
Vineyard
The grapes come from old dry-farmed vineyards planted on sandy slate and granitic soils at 750 to 1070 metres above sea level. Harvest was carried out by hand.
Winery
After the grapes were chilled overnight, fermentation took place at low temperature in concrete tank, with some whole bunches included. This was followed by malolactic and six months’ ageing in 10,000-litre conic tanks.
