Soto Manrique champions the pure, delicate style of Garnacha that has made Gredos one of Spain’s most lauded emerging regions. The winery focuses on minimal intervention and precise vineyard selection, sourcing fruit from high-elevation parcels that offer extraordinary depth and finesse.
Vineyard
Old-vine Garnacha grows on granite-based soils with sand, quartz, and schist influences. Vines range from 40 to over 80 years old, producing naturally low yields. The high-elevation vineyards—often above 800 metres—confer cool nighttime temperatures that maintain freshness and aromatic definition. These rugged conditions result in elegant, pale-coloured wines with remarkable mineral clarity.
Winery
Hand-harvested grapes are gently handled, typically with whole-bunch fermentation to enhance aromatic lift and tension. Ageing takes place in neutral barrels or concrete, ensuring the wine remains fruit- and terroir-driven. Minimal extraction and low sulphur additions preserve finesse, brightness and the hallmark granite texture of Gredos Garnacha.
