Producer
The Soto Manrique family first came to winemaking in Rueda, but as the second generation has joined the business, they have turned their attention to producing wines in the Cebreros DO, located in the Sierra de Gredos mountain range to the west of Madrid. This up-andcoming region is starting to gain plaudits for producing a unique style of Garnacha, with an almost Pinot-like elegance and finesse, crafted from old vines planted on granite and slate soils. Alongside this they also cultivate the indigenous Albillo Real, an aromatic white grape, here given a spell of skin contact to add structure and complexity.
Vineyard
The grapes come from fifty-year-old vineyards planted at an altitude of between 600 and 800 metres above sea level, on sand and granite soils at a density of 1,400 plants per hectare. Harvest was carried out by hand on the 7th of August at a yield of 1,500kg per hectare
Winery
Fermentation took place on the skins in concrete tanks. Once complete, the wine was racked to stainless steel tanks for six weeks’ ageing on the lees, followed by a further period of ageing off the lees, also in tank.
