A large amount of fish and seafood is caught wild; this can lead to overfishing, destructive catch methods and unwanted by the boat. Our suppliers have taken the stance to work closely from within the industry to guide customers towards sustainable choices.

Dover Sole is known as the ‘king’ of the soles’, many French classic fish dishes such as Poached sole Bonne Femme, sole Veronique and sole a la Meunière have been inspired by this superb fish. The Dover Sole has a longer and narrower shaped body than other flatfish and has a distinctive dark brown skin. Its flesh is firm to the touch, crisp white colour and practically sweet to taste.

Dover Sole is available in sizes ranging from 340g to 1.3kg. Dover Sole, unlike most other fish, is best left for 1-2 days after been caught before cooking as the flesh can often be too firm to cook immediately, this period also enhances the flavour. The best size fish is 400-450g which is perfect for grilling, pan frying or making a whole a la meunière.
