Piave Vecchio is a traditional hard cheese from the Veneto region, made from pasteurised cow’s milk and aged for around 9–12 months. Over this time, it develops a firm, slightly crumbly texture and a complex flavour profile with fruity, nutty and gently caramelised notes. Often compared to a younger, sweeter alternative to Parmigiano Reggiano, it grates beautifully over pasta and risotti, yet is equally delicious served in chunks on a cheese board. Pair it with full-bodied white wines or light reds and complement its flavour with honey, nuts or cured meats. It is a versatile classic of northern Italian cheesemaking.
