How To Make Gooey Vegan Gourmet Brownies

Reliable and fairly foolproof: brownies are our go-to for fulfilling any chocolate craving. These vegan gourmet brownies are thick and seriously fudgy, with the classic shiny, papery top – your non-vegan friends will never know the difference.

With only 7 simple ingredients, these vegan gourmet brownies are super easy and quick to throw together, and we guarantee they’ll become a family favourite! We like to stuff our brownies with copious amounts of chocolate chunks for ultimate indulgence.

Ingredients:

 

  • 175g self-raising flour
  • 150g light brown sugar
  • 50g cocoa powder- use Dutch-process cocoa if you can
  • 250g vegan dark chocolate
  • 1tsp vanilla extract
  • 200ml dairy free milk (soy, almond)
  • 200g vegan chocolate chopped into large chunks (Our favourites are Vego, Lindt 70% cocoa or Nomo)
  • Chopped hazelnuts (optional)

 

 

Method:

 

  1. Preheat your oven to 180C/160C Fan, and line a 9×9″ square tin with grease proof paper.
  2. Either: Break your chocolate into small chunks and melt in a large bowl over boiling water or melt in the microwave in short bursts taking care not to burn it.
  3. Add in the oil, milk and vanilla and mix until smooth.
  4. In a separate bowl, whisk together your flour, cocoa powder and sugar until combined.
  5. Fold in the dry mix to the liquid mix and stir using a figure of 8 motion until combined and smooth – ensure not to over-mix. Then, fold in the chopped chocolate pieces.
  6. Pour into your lined tin and bake in the oven for around 20-25 minutes until baked through but slightly wobbly.
  7. Leave to cool in the tin for 10-15 minutes, then lift the greaseproof paper out of the tin and allow the brownies to cool until they have hardened- This will help with cutting.
  8. Slice into even squares and enjoy with vegan ice-cream and strawberries.

 

Tip: the brownies will continue to bake as they cool, so don’t be tempted to leave them in for too long as they will become cake-like.
