Breakfast

Chocolate and Banana-stuffed French Toast

 

French toast is a brunch classic. Thick slices of brioche toast dipped in an egg mixture, before being fried until golden brown. Yet this doesn’t sound too plant based, right? Worry not! You can, in fact, still enjoy this morning treat using only animal-friendly ingredients. Ground flax plays the part of the egg in this recipe, whilst oat milk and dairy-free cream provides the same creaminess as its non-vegan counterpart.

Here you can find a delicious vegan French toast alternative, oozing with chocolate and banana; you’d never know it was plant-based.

Tip: make sure you use unsliced white farmer’s loaf bread that has been left for a day or two in order to prevent soggy French toast. Top with sliced strawberries, banana and a dusting of icing sugar for a restaurant-quality breakfast.

Lunch

Chickpea-Tuna Ciabatta

 

Don’t knock it ’til you’ve tried it! Yes, mimicking tuna out of chickpeas may seem incredibly bizarre, but it really does work in its own way. The sliced nori and soy sauce really brings in the ‘fishy’ flavour into this recipe. Smashed chickpeas, vegan mayonnaise, fresh dill, capers, red onion and sweet corn come together to form a plant based ‘tuna mayo’ quite like no other. Spread onto a toasted ciabatta bread with avocado and vegan pesto for a real lunchtime treat.

 

 

Dinner

Crispy Glazed Tofu with Spicy Udon Noodles

 

Now for perhaps our favourite plant based recipe; this crispy glazed tofu and spicy udon noodle combo is the perfect weekday dinner recipe. This is a great option for using up any vegetables you may have lying around – we love to use tenderstem broccoli, peppers, spring onions and mushrooms. This tofu makes a mockery of any claims that tofu is simply a boring, flavorless sponge. It’s incredibly crispy, sticky and an all-around pleasure in every bite. Tip: make sure you coat the tofu in corn flour before frying: it will make all the difference in achieving that perfect crispy coating!
