Sturia is the only producer of Caviar left in France, having been producing in Aquitaine, Southwest France for over 20 years. Every process from breeding to harvesting and maturation is carefully managed at their farms in order to ensure the highest of quality. All the eggs are hand sieved and washed in clean water before being delicately salted using the Malossol method. The Caviar is then left to mature for between 3-8 months, producing its famously smooth texture, creamy flavor, and a salty-sweet finish.
