Provolone Cave Aged from Apulia is a traditional stretched-curd cheese made with unpasteurised cow’s milk and matured in natural underground caves. During around six months of ageing, it develops a firm yet supple texture and a rich, aromatic flavour with buttery, tangy and slightly spicy notes. This complexity makes it excellent for both eating and cooking: slice for cheese boards, melt into sandwiches or use in baked dishes and gratins. It pairs particularly well with full-bodied red wines and robust cured meats. As an artisanal product rooted in regional techniques, it brings authentic southern Italian character to the table.
