Vineyard
Rock Angel is sourced from vineyards in the heart of Provence, primarily from the hills around La Motte and surrounding communes. Grapes benefit from limestone and clay soils that retain freshness while promoting aromatic intensity. The region’s warm Mediterranean climate, tempered by the Mistral wind, ensures healthy grapes and slow, even ripening. Older vines and careful parcel selection result in fruit with natural concentration and balanced acidity.
Winery
Grapes are harvested at night to preserve aromatics, then gently pressed to achieve a pale colour and delicate extraction. Fermentation occurs partly in stainless steel and partly in large oak demi-muids to enhance texture. Lees ageing contributes roundness and subtle spice. The result is a sophisticated rosé bridging freshness and structure, designed for both casual enjoyment and gastronomic pairing.
