Based in Guijuelo, a small town in central Spain, this company is renowned for its top-quality Iberico ham and fresh meat products. Founded in 1933, its eponymous owner Julián Martín wanted to bring passion and determination into the production process of Iberico ham: the crowning jewel of Spanish gastronomy.
Julián Martín’s products are traced from their origins to the moment they are served to your table, thanks to a strict certification process guaranteeing the correct treatment of their pigs. In monitoring the entire production cycle, Julián Martín can guarantee the quality of their produce. Once bred, the meat is naturally cured in drying rooms, which contain large windows, allowing the wind from the Sierra de Guijuelo to dehydrate the produce. This gives their meat a unique and flavourful taste.
Using traditional methods, which date back three generations, Julián Martín pride themselves on the quality and gourmet flavours of their meat, which are characteristically juicy and aromatic.
