Description

Castelli Balsamic Vinegar Modena is a versatile, everyday Balsamic Vinegar of Modena I.G.P. Dark brown, persistent and well-balanced, with the classic sweet-and-sour character Modena is famous for. Made from cooked grape must and wine vinegar with a minimum acidity of 6%, this 500ml bottle is the workhorse of any Italian kitchen — versatile enough for everyday cooking yet with genuine Modenese character, produced by a family acetaia with over 125 years of experience.

About Acetaia Castelli – Since 1895

Founded in 1895 in Rio Saliceto, near Reggio Emilia, Acetaia Castelli is now in its fourth generation of vinegar masters — Giuseppe Poli, Aldo Poli, Danilo Iotti and Andrea Iotti. The family farmhouse acetaia still houses rows of wooden barrels where musts mature slowly, exactly as they have for over 125 years, giving every bottle real Modenese heritage and craftsmanship.

Every product begins with grapes grown and pressed close to the acetaia, cooked slowly over open flame and matured according to methods passed down through the family. The Modena and Reggio Emilia Consortiums oversee the strict rules that protect these traditions, ensuring that every label carries real provenance and quality you can trust.

How to Use & Serving Suggestions

Castelli Balsamic Vinegar Modena is wonderfully versatile in the kitchen. Try it in these ways:

  • Whisk into vinaigrettes for salads.
  • Splash into pan sauces and marinades.
  • Drizzle over roasted or grilled vegetables.
  • Finish soups and stews with a touch of acidity.

Perfect Pairings

Castelli Balsamic Vinegar Modena pairs beautifully with:

  • Mixed leaf salads
  • Roasted vegetables
  • Grilled chicken or turkey
  • Pan sauces

Like all Acetaia Castelli products, this is highly preservable and best kept in a cool, dry place away from direct sunlight and heat sources. Once opened, simply reseal the cap tightly between uses — there’s no need to refrigerate, so it’s always ready on the shelf whenever inspiration strikes.

However you serve it, Castelli Balsamic Vinegar Modena brings the authentic taste of Modena to your table — a true artisan product worth seeking out.

Acetaia Castelli: Generations of Balsamic Mastery from Emilia Romagna

Rooted in the Heart of Reggio Emilia

Acetaia Castelli is based in a beautifully restored 130-year-old farmhouse in Rio Saliceto, a sun-drenched village in the province of Reggio Emilia. The warm, dry summers and rich agricultural heritage of the region provide the ideal conditions for producing exceptional balsamic vinegar, with precious barrels carefully matured in the attic using methods that have been preserved for generations.

Quality Guided by Tradition

Quality has always been at the heart of Acetaia Castelli. Using only carefully selected D.O.C. grapes from local vineyards, every stage of production is closely monitored to ensure consistency, authenticity and excellence. This unwavering commitment to quality has allowed the family to create balsamic vinegars that reflect both the character of the land and the expertise of the artisans who craft them.

A Family Legacy Passed Through Generations

The origins of Acetaia Castelli can be traced back to Giuseppe Poli, who lovingly cared for his collection of wooden barrels and developed a reputation for producing outstanding balsamic vinegar. His passion was passed to his son, Aldo Poli, and later to his son-in-law, Danilo Iotti, who dedicated the family’s grape harvests to the production of traditional balsamic vinegar. Today, the business is led by Andrea Iotti, whose creativity and skill as a Balsamic Master have helped establish Acetaia Castelli as a respected name around the world.

Pure Ingredients, Authentic Flavour

Acetaia Castelli remains committed to traditional production methods and absolute purity. Their vinegars are crafted using only cooked grape must and, in some cases, their own wine vinegar produced from estate-grown grapes. No colourings, thickeners, caramel or artificial ingredients are ever added, allowing the natural richness, balance and complexity of the grapes to shine through.

Preserving a Noble Tradition

The family’s dedication to balsamic vinegar extends beyond production. Aldo Poli was among the early supporters of the traditional balsamic industry, investing in certified barrels and joining the newly established consortium dedicated to protecting the heritage of authentic balsamic vinegar. This commitment to tradition continues today, ensuring that every bottle reflects the values and craftsmanship that have defined the family for decades.
