Castelli Saba Grape Must is Saba, one of Italy’s most ancient condiments — a dark, clear and brilliant cooked grape must with a persistent, intense and sweet flavour. Made from cooked must of Lambrusco, Trebbiano and Spergola grapes with a density of over 1.35 and 71° Brix, Saba (also called “Vin Cotto” in some regions) is the same must used as the starting point for Traditional Balsamic Vinegar P.D.O. — but enjoyed here in its purest form.

About Acetaia Castelli – Since 1895

Founded in 1895 in Rio Saliceto, near Reggio Emilia, Acetaia Castelli is now in its fourth generation of vinegar masters — Giuseppe Poli, Aldo Poli, Danilo Iotti and Andrea Iotti. The family farmhouse acetaia still houses rows of wooden barrels where musts mature slowly, exactly as they have for over 125 years, giving every bottle real Modenese heritage and craftsmanship.

Every product begins with grapes grown and pressed close to the acetaia, cooked slowly over open flame and matured according to methods passed down through the family. The Modena and Reggio Emilia Consortiums oversee the strict rules that protect these traditions, ensuring that every label carries real provenance and quality you can trust.

The origins of Acetaia Castelli can be traced back to Giuseppe Poli, who lovingly cared for his collection of wooden barrels and developed a reputation for producing outstanding balsamic vinegar. His passion was passed to his son, Aldo Poli, and later to his son-in-law, Danilo Iotti, who dedicated the family’s grape harvests to the production of traditional balsamic vinegar. Today, the business is led by Andrea Iotti, whose creativity and skill as a Balsamic Master have helped establish Acetaia Castelli as a respected name around the world.
