Producer
Julien Brocard is the son of Jean-Marc, one of the best-known growers in Chablis. As well as taking the reins of the sizeable family firm, Julien also produces a range of limited-production wines under his own name. Having first challenged his father’s scepticism by introducing biodynamics on one parcel of Chablis, La Boissonneuse, in 1998, Julien launched his full range of biodynamic wines in 2012.
Vineyard
This wine comes from certified biodynamic vineyards; the vines average thirty-five years old and were hand-harvested.
Winery
Following a pneumatic pressing, the juice underwent fermentation with indigenous yeasts at controlled temperatures in stainless steel vats, and malolactic fermentation was completed.
