Producer
The Crochets have thirty-one hectares of vineyards spread across four communes in the Sancerre appellation, including the largest single holding of vineyard property in Bué. The soil composition in this area yields wines that are highly aromatic with excellent balance, as well as rustic than those from elsewhere in the appellation. Hand harvesting – a rarity in Sancerre – and the use of indigenous yeasts give particularly nuanced, elegant wines.
Vineyard
Vines are planted half-way up a slope with southern, south-eastern and south-western exposure, at an altitude of between 240 and 260 metres. The shallow, stony soil is Oxfordian limestone. Grapes were hand-picked.
Winery
The whole bunches of grapes were transferred to the pneumatic presses by means of a belt in order to avoid bruising the skins. After cold settling, the must underwent fermentation in thermo-regulated tanks for approximately thirty-five days with frequent stirring.
