Tormaresca is owned by the Antinori family and represents one of the most influential forces behind Puglia’s quality revolution. The estate manages two major properties: Bocca di Lupo in the Castel del Monte area and Masseria Maìme in Salento. Bocca di Lupo is the crown jewel—a pioneering project dedicated to expressing Aglianico’s full potential in the limestone-rich hills of northern Puglia.
Vineyard
Bocca di Lupo is located at approximately 300 metres above sea level in the Alta Murgia region, a landscape dominated by white limestone, cool breezes and large diurnal shifts. These conditions are ideal for Aglianico, producing grapes with thick skins, powerful structure and intense aromatics. The vineyards are farmed organically, with meticulous attention to soil health and biodiversity. The vines root deeply into rocky, mineral soils, giving the wine its signature tension and savoury depth.
Winery
Grapes undergo careful sorting before a long, slow maceration and temperature-controlled fermentation. Ageing takes place partly in French oak barrels and partly in concrete, striking a balance between complexity, freshness and purity. Extended cellaring in bottle ensures integration and longevity, producing a wine capable of ageing for decades.
