The “Hase”, or rabbit, is not only the namesake of famous vineyard sites, such as Hasensprung in the Rheingau. It is also a versatile creature that lives in a number of habitats ranging from tundra to grasslands to tropical forests. As a herbivore, it lives on grass, herbs, leaves, and blossoms. Last but not least, the rabbit is known for its high fertility rate. Hasensprung, versatile, grasslands, tropical, herbs, leaves, blossoms, fertility… Inspiration enough for the Ress family to create a wine in honor of the rabbit, White Rabbit Riesling.
Vineyard
This Riesling is made from fruit grown on loess-loam and limestone soils in the Rhein valley.
Winery
The wine was fermented in temperature-controlled stainless steel vats, and bottled early, without oak ageing or malolactic fermentation, to preserve freshness.
