Yellow Cauliflower Head is a whole yellow cauliflower – the golden variety with a warm, slightly nuttier and sweeter flavour than standard white cauliflower. Yellow cauliflower gets its colour from beta-carotene, the same pigment found in carrots. As a result, it has a marginally richer, more complex flavour and a beautiful golden colour that intensifies during roasting.
