A large amount of fish and seafood is caught wild; this can lead to overfishing, destructive catch methods and unwanted by the boat. Our suppliers have taken the stance to work closely from within the industry to guide customers towards sustainable choices.

Fresh British Sea Bass can be found wild from an area spanning from the Mediterranean to the North Sea in Norway during the spring and summer months. Sea Bass grow up to a size of 7kg, at which point they are considered a prize catch, especially when caught with a rod and line. Since the introduction of farming in the Mediterranean, the Sea Bass highly is now considerably more affordable, and in plentiful supply all year round. The main difference between wild and farmed Sea Bass is that farmed bass has a slightly higher fat content.
A whole bass from 300g-600g are perfect gutting, scaling, and the stuffing with herbs and spices, then baking or grilling. Fillets with skin-on 2 per person from a 400-600g fish and 1 from an 800g fish, are perfect for grilling or pan-frying. Large fish over 3kg also produce some good suprêmes.
Fresh British Sea Bass has a uniquely delicious flavour which works on its own, but can also work with stronger flavours and tastes, Sea Bass is especially popular in Asian cuisine.
