Castelbelbo is a soft ripened cheese, made in Piedmont, in the Alta Langa region. It is made with 3 different un’spasteurised milks (cow, sheep and goat’s), traditional rennet and it is 6-8 weeks aged. Castelbelbo cheese is a gentle, aromatic cheese with fresh grass sensations.
