Deli Farm Charcuterie

With a history as rich as its range of produce, this renowned Cornish farm is run by Martin & Jean Edwards, settled among the sweeping hills of Cornwall. Deli Farm Charcuterie is celebrated for its award-winning air-dried charcuterie products, which include various flavours of salami, coppa, bresaola, duck prosciutto, smoked lamb prosciutto, pancetta, and even wild venison. The company place great important on sourcing their meat from local producers, and aim to minimise their carbon footprint as much as possible during the production process.

In 2005, the farm’s first batch of salami was made using just an old smoker, a CPU fan, a lightbulb, a domestic fridge, and an air-drying room – things have changed considerably since then! Deli Farm Charcuterie has, over the years, achieved a number of Great Taste of the West awards, as well as being runners-up for the Best Producer at the Radio 4 Food and Farming Awards. They are one of the best suppliers of air-dried meat in the country.Their methods are centred around Italian winter salamis, these techniques then combined with modern technology. This gives them optimal drying and maturing conditions. Their products use prime cuts of meat from top local producers; they then apply freshly-ground herbs and spices before hanging and air-drying their charcuterie meats. Deli Farm Charcuterie supply some of the UK’s top chefs, and are also famed for supplying mixed meat platters to members and players at the 2012 and 2013 Wimbledon championships.
