The elegant mousse gives way to tempting notes of acacia flowers, ripe apple and stone fruit. There is an uncommon depth to the flavour that follows through on the crisp and lengthy finish.

Producer

Founded in 1979 by wine merchant Mario Caramel, the goal at Canevel remains to highlight the true potential of the Glera grape. The name, meaning ‘small cellar’ in the local dialect, is a testament to the boutique origins of this now prestigious producer. Based in the historic heart of Prosecco production, the Valdobbiadene-Conegliano Superiore DOCG, they make wines with a strong sense of identity, full of freshness, fragrance and with a level of complexity that is rare for this region. The sheer drinkability of their DOC bottling is impressive enough, but it is the DOCG wines and in particular the single vineyard Vigneto del Faè, made without dosage, that highlight the ambition of this benchmark producer.

Vineyard

The grapes come from steeply sloping hillside vineyards at altitudes of over 300 metres, planted on free-draining soils rich in sandstone.

Winery

Following a gentle pressing, the juice was left to settle for eight hours at 15oC. The juice then underwent temperature controlled fermentation in stainless steel tanks, followed by a second fermentation at low temperature in sealed tanks. The wine was then aged for one further month in tank before bottling.
